Job Description: Senior Manager - Food & Beverages

Position Overview:

We are seeking a dynamic and experienced Senior Manager – Food & Beverages with a strong background in pastry and bakery operations within the hospitality industry (preferably hotels) and proven expertise in new product development. The role will be responsible for overseeing the complete food and beverage operations, ensuring exceptional quality standards, optimizing the menu, and driving innovation in the product offerings.

The ideal candidate will have an eye for detail, an understanding of trends in the QSR industry, and a passion for delivering exceptional customer experiences through culinary excellence.

Key Responsibilities:

  • Menu Innovation & Development: Lead the development and conceptualization of new food and beverage offerings, particularly in the pastry and bakery segment, aligned with market trends and customer preferences.
  • New Product Development (NPD): Drive the end-to-end process of product innovation, from ideation to recipe formulation and testing, ensuring seamless integration into the menu with a focus on quality, cost, and customer experience.
  • Quality Control & Consistency: Oversee the daily food production process to ensure consistency, quality, and presentation standards for all bakery and pastry products.
  • Team Leadership & Training: Manage, mentor, and develop a team of culinary professionals to deliver exceptional results while maintaining a high level of morale and productivity.
  • Cross-functional Collaboration: Work closely with operations, supply chain, and marketing teams to launch new products effectively, ensuring they align with the brand and customer expectations.
  • Cost Control & Waste Management: Implement strategies to optimize food costs, minimize wastage, and ensure profitability without compromising on quality.
  • Vendor & Supplier Management: Establish and maintain relationships with key suppliers and vendors to ensure the sourcing of high-quality ingredients for bakery and pastry production.
  • Customer Experience Enhancement: Use customer feedback and market research to enhance the customer dining experience, particularly in the bakery and pastry segments.
  • Compliance & Hygiene Standards: Ensure all products meet food safety regulations, health codes, and internal hygiene standards across all locations.
  • Performance Metrics: Track and report on performance metrics, including sales, customer feedback, and product performance, adjusting strategies as needed.

Key Requirements:

  • Educational Qualification: Bachelor's degree in Culinary Arts, Hotel Management, or related fields. Advanced certification in pastry and bakery preferred.
  • Experience:
  • Minimum 5+ years of experience in a similar role within the QSR industry or a hotel setting with expertise in pastry, bakery, and food development.
  • Proven experience in new product development and innovation in a fast-paced food service environment.
  • Skills:
  • Expertise in pastry, bakery, and dessert-making processes, particularly within a hotel or premium food service context.
  • Strong knowledge of the latest food trends, particularly in the bakery and pastry segment.
  • Proficiency in cost control, budgeting, and managing food waste.
  • Ability to lead and motivate cross-functional teams.
  • Excellent communication and interpersonal skills.
  • Strong analytical abilities with the capacity to drive business decisions.
