PrimaryResponsibilities

  • Supervisionof Receiving Clerk handling of Food and Beverage requisitionspreparation of Sales Analysis and Standard Recipe Costingpreparation of Cost Reports monitoring and control of non foodpurchases against budget precost of all restaurant and banquet menuinventory of  Food and Beverage and general items andmanagement of minimum and maximum par level of all storeitems.
  • To ensure the smooth and efficientoperation of Cost Control Store rooms and Receiving and to assistManagement in keeping the cost of food beverage and other suppliesto the minimum. 
  • Any matter which mayeffect the interests of the hotel should be brought to theattention of theManagement.

FinancePlanning

  • Ensureto perform the various activities like menu costing menu pricingand introducing or changing of menus according to the Food andBeverage Departments requirements.
  • Preparemonthly listing of slow moving and obsolete items and recommendfurtheraction

PeopleManagement

  • Establishand maintain seamless coordination & cooperation with alldepartments of The hotel to ensure maximum cooperation productivityand guest service.
  • Respond to queries byresolving issues in a timely and efficient manner to ensurecustomer satisfaction.
  • Ensure that allpersonnel are kept well informed of departments objectives andpolicies.

FinancialManagement

  • Identifyoptimal cost effective use of the resources and educate the team onthesame.

OperationalManagement

  • Carryout all Food and Beverageinventories.
  • Supervise all operationalfunctions of Cost Controlling such as.
    • Checkingof KOTs/BOTs.
    • SpotChecks.
  • Finalize all costrelated accounts for Food andBeverages.
  • Compare the monthly food andbeverage purchases with the AccountPayables.
  • Ensure to submit all Food andBeverage cost related details to the AccountsDepartment.

Conduct monthly inventoryof food beverage and other storeroomitems
