About Us:

Kerala Café is a well-established restaurant brand with multiple outlets across Pune, Mumbai, Kerala, and Bangalore, known for authentic Kerala cuisine and exceptional dining experiences. We are looking for a skilled and experienced Cluster Chef to oversee all kitchen operations for our Mumbai region outlets (Baner & Kalyani Nagar).

Key Responsibilities:

  • Oversee and manage all kitchen operations for assigned outlets in the Mumbai region.
  • Ensure consistent food quality, taste, and presentation in line with Kerala Café standards.
  • Supervise and guide kitchen teams, including Head Chefs, Cooks, and Kitchen Assistants.
  • Plan and execute menu items, daily specials, and new dish introductions in coordination with the corporate culinary team.
  • Maintain kitchen hygiene, safety, and sanitation standards as per FSSAI and company norms.
  • Control food costs through effective inventory management, portion control, and waste reduction.
  • Monitor and maintain proper stock levels, requisitions, and vendor coordination.
  • Conduct regular kitchen audits and training sessions to improve performance and consistency.
  • Support recruitment, onboarding, and performance evaluation of kitchen staff in the region.
  • Work closely with the Operations and HR teams to ensure smooth day-to-day functioning.
  • Report to the Group cluster chef on kitchen performance and operational issues.

Requirements:

  • Experience: Minimum 5–7 years of culinary experience, with at least 2–3 years in a senior or multi-outlet (cluster) role.
  • Proven expertise in South Indian / Kerala cuisine is highly preferred.
  • Strong leadership, team management, and communication skills.
  • Excellent understanding of kitchen operations, food cost control, and hygiene standards.
  • Ability to multitask and manage multiple locations efficiently.
  • Flexible to travel between outlets as required.
  • Qualification: Diploma or Degree in Hotel Management / Culinary Arts preferred
