Location: Artjuna – Goa Main Branch

Restaurant Capacity: 200–250 seats

As the Kitchen Head at Artjuna's flagship outlet in Goa, you will be responsible for overseeing the entire kitchen operations, ensuring the highest standards of hygiene, food quality, staff management, and kitchen efficiency. You will play a pivotal role in maintaining the brand's commitment to fresh, healthy, and flavorful food while ensuring smooth day-to-day functioning.

Key Responsibilities:

  1. Hygiene & Sanitation

  2. Ensure that all FSSAI guidelines and HACCP standards are strictly followed.

  3. Conduct daily hygiene checks and ensure cleanliness of kitchen stations, equipment, and storage areas.
  4. Implement and monitor cleaning schedules for all areas and surfaces.
  5. Oversee proper waste management and pest control practices.

  6. Food Production & Quality Control

  7. Supervise all kitchen production including prep, mise en place, and final plating.

  8. Ensure consistency in portion sizes, taste, and presentation as per Artjuna's standards.
  9. Regularly inspect quality and freshness of raw materials and ingredients.
  10. Maintain real-time awareness of inventory levels and minimize food wastage.

  11. Team Leadership & Staff Management

  12. Lead a team of chefs, cooks, and stewards across various stations.

  13. Create weekly rosters and shift plans in collaboration with HR/Operations.
  14. Conduct onboarding and continuous training on SOPs, hygiene, and new recipes.
  15. Address and resolve any interpersonal or operational issues within the kitchen team.

  16. Kitchen Operations & Coordination

  17. Ensure the kitchen runs in sync with the café's service flow and timing.

  18. Work closely with the service team for smooth communication and order execution.
  19. Handle all kitchen-related vendor coordination for ingredients and supplies.
  20. Manage equipment upkeep, kitchen maintenance, and repair requirements proactively.

  • Proven experience in managing a high-volume kitchen (200+ covers/day)
  • Strong knowledge of Mediterranean cuisine, healthy/organic cooking is a plus
