Key Responsibilities:
1. Kitchen Hygiene & Sanitation
- Supervise and ensure cleanliness of all kitchen areas, dishwashing zones, storage areas, and garbage disposal sections.
- Monitor cleaning schedules and ensure compliance with food safety standards.
- Oversee proper segregation and disposal of kitchen waste as per company and statutory guidelines.
2. Team Supervision & Training
- Supervise daily duties of stewards and ensure work is completed as per standard operating procedures.
- Conduct regular training on hygiene, grooming, and safety practices.
- Schedule stewarding staff and maintain discipline and punctuality.
3. Equipment & Inventory Management
- Ensure safe handling and maintenance of kitchen equipment, utensils, and dishwashing machines.
- Monitor breakage and report discrepancies to the manager.
- Maintain adequate stock of cleaning chemicals, tools, and consumables.
4. Coordination & Support
- Coordinate with chefs and other departments to ensure smooth kitchen operations.
- Assist in setup and clearance during peak operations, functions, or events.
- Support in deep cleaning schedules and ensure timely execution.
5. Compliance & Reporting
- Maintain checklists and daily cleaning logs for audit and review.
- Ensure compliance with FSSAI, HACCP, and company hygiene standards.
- Report maintenance issues, safety hazards, or any non-compliance immediately.
Skills & Qualifications:
- Graduate / Diploma in Hotel Management or equivalent.
- 2–5 years of experience in kitchen stewarding or hygiene supervision (preferably in food industry / large base kitchen).
- Knowledge of food safety, hygiene, and cleaning procedures.
- Good communication and leadership skills.
- Basic computer knowledge (MS Excel, documentation).
