  • The Head Baker leads all bakery production operations, ensuring high-quality, consistent, and innovative products. This role demands strong technical baking skills, fermentation knowledge, leadership ability, and a passion for artisan methods. The candidate will oversee day-to-day production, maintain product standards, manage a team, and contribute to new product development.

Key Responsibilities1. Production & Quality Control

  • Oversee and execute daily production of artisan breads and baked goods.
  • Ensure consistency in dough preparation, proofing, fermentation, shaping, and baking.
  • Monitor product quality, texture, flavor, and presentation.
  • Maintain accurate production timelines and manage multiple batches simultaneously.

2. Recipe & Product Development

  • Create and test new bread varieties and seasonal innovations.
  • Improve existing recipes for consistency, flavor, and cost efficiency.
  • Introduce signature breads aligned with Bread Lab's identity.

3. Team Leadership

  • Supervise, train, and mentor junior bakers and assistants.
  • Assign daily tasks, manage workflow, and maintain discipline.
  • Foster a positive and efficient kitchen culture.

4. Inventory & Operations Management

  • Manage inventory of flour, grains, yeast, and raw materials.
  • Coordinate with suppliers (TWF, Chef's Choice, others) and ensure timely ordering.
  • Control wastage and maintain ideal food cost percentages.
  • Ensure machines, mixers, ovens, and fermentation equipment are maintained.

5. Hygiene & Compliance

  • Ensure strict hygiene, cleanliness, and safety standards at all times.
  • Comply with FSSAI guidelines and internal SOPs.
  • Conduct regular quality checks and maintain records.

Skill RequirementsTechnical Skills

  • Strong knowledge of sourdough, preferments, hydration, scoring, crust development, and fermentation.
  • Experience with deck ovens, spiral mixers, planetary mixers, proofers, and dough sheeters.

Leadership & Soft Skills

  • Strong communication and team management capability.
  • Ability to work under pressure and manage early morning shifts.
  • Creative and detail-oriented with a passion for artisan baking.

Qualifications

  • Diploma or certification in baking/patisserie preferred.
  • Minimum 5 years of experience in artisan bread production.
  • Experience in leading a bakery team is a strong advantage.

Job Types: Full-time, Permanent

Pay: ₹30, ₹35,000.00 per month
