Job Summary:

The Chef de Partie (CDP) is responsible for managing a specific section of the kitchen, ensuring the preparation and presentation of high-quality dishes in accordance with the resort's standards. This role requires culinary expertise, leadership skills, and a passion for creating exceptional dining experiences for our guests.

Key Responsibilities:

  • Manage a specific section of the kitchen (e.g., hot kitchen, cold kitchen, pastry, grill, sauces, or regional cuisine).
  • Prepare, cook, and present dishes according to recipes, portion control, and quality standards.
  • Ensure the section is well-organized, clean, and compliant with hygiene and safety standards.
  • Assist the Sous Chef and Executive Chef in menu planning, inventory management, and ordering ingredients.
  • Train and supervise junior kitchen staff, ensuring teamwork and efficient workflow.
  • Monitor stock levels, minimize wastage, and maintain proper storage of ingredients.
  • Maintain knowledge of local ingredients, Kerala cuisine specialties, and seasonal produce.
  • Ensure compliance with food safety regulations and resort policies.
