
Food and Beverage Cost Controller

_**Job Summary**:_ The Food and Beverage Cost Controller is responsible for managing and analyzing the costs associated with food and beverage operations. This role involves monitoring inventory, conducting cost analysis, and ensuring compliance with financial policies to maximize profitability and minimize waste.
- **Key Responsibilities**:_
1.**Cost Analysis**: ∙Analyze food and beverage costs and prepare detailed reports for management. ∙Monitor variances between actual and budgeted costs, providing explanations and recommendations.
2.**Inventory Management**: ∙Conduct regular inventory audits to ensure accurate stock levels. ∙Oversee the ordering and receiving processes to maintain optimal inventory levels and minimize waste. ∙Processes Food & Liquor accruals ∙Ensures compliance with documentation/authorization processes ∙Reviews purchasing procedures for all F&B items
3.**Menu Pricing**: ∙Collaborate with culinary teams to determine appropriate pricing strategies based on food costs and market trends. ∙Assist in menu development by providing cost calculations for new dishes.
4.**Budget Preparation**: ∙Assist in the preparation of annual budgets for food and beverage operations. ∙Monitor and report on budget performance throughout the fiscal year. ∙Develop and implement proactive solutions and cost-cutting measures.
5.**Standard Operating Procedures**: ∙Develop and implement standard operating procedures for food and beverage costing and inventory management. ∙Ensure compliance with company policies and industry regulations.
6.**Reporting**: ∙Generate monthly and quarterly reports detailing food and beverage costs, profitability, and trends. ∙Present findings to management and recommend strategies for improvement.
7.**Collaboration**: ∙Work closely with the purchasing department to ensure proper pricing and sourcing of food and beverage products. ∙Coordinate with the accounting team to reconcile financial discrepancies related to food and beverage operations.
8.**Training**: ∙Train staff on proper inventory control procedures and cost management practices. ∙Foster a culture of cost awareness and accountability within the food and beverage team.
- **Qualifications**:_
Bachelor’s degree in Accounting, Finance, Hospitality Management, or a related field.
- **Experience**:_
Minimum of 5 to above years of experience in cost control or accounting within the food and beverage industry.
- **Skills**:_
∙Strong analytical and mathematical skills.
∙Proficiency in accounting software and Microsoft Excel.
∙Excellent communication and interpersonal skills. ∙Attention to detail and ability to work under pressure.
- **Preferred Qualifications**:_
∙Certification in Hospitality Management or Cost Control.
∙Experience with inventory management systems.
∙Familiarity with food safety regulations.
- **Working Conditions**:_
∙Office environment with some time spent in kitchen and storage areas.
∙May require occasional evening or weekend work depending on business needs.
