- Food preparation: Preparing cold foods like salads, appetizers, pâtés, terrines, and more, according to recipes and standards
- Food storage: Ensuring food is stored properly and at safe temperatures, and that the walk-in refrigerator is organized and stocked
- Menu planning: Helping to plan the menu within the kitchen budget
- Food presentation: Designing visually appealing displays for cold food
- Safety and sanitation: Following safety and sanitation procedures, and maintaining a clean kitchen
- Collaboration: Working with other kitchen staff to ensure smooth operations
- Staff meetings: Attending staff meetings to learn about new policies, procedures, and menu changes
- Staying current: Keeping up with culinary trends

A garde manger chef needs to have a variety of skills, including:

- Physical stamina: They need to be physically fit for the hands-on cooking involved
- Fine motor skills: They need to be able to perform precise movements
- Interpersonal skills: They need to be able to work well with others
- Mathematical skills: They need to be able to scale recipes, place orders, and manage the budget
