**Job Title**: Food & Beverage (F&B) Controller

**Reports To**: Financial Controller / Director of F&B
**Location**: The Shalimar Hotel
**Position Type**: Full-time

**Job Summary**:
The F&B Controller is responsible for managing the hotel’s food and beverage cost control processes, inventory management, and waste reduction. The role ensures all F&B revenues and expenses are accurately monitored, discrepancies are addressed, and financial targets are met. This position requires a strong understanding of cost accounting, procurement processes, and inventory systems specific to the hospitality industry.

**Key Responsibilities**:

- Monitor and control all F&B costs within the hotel in accordance with the budget.
- Conduct regular inventory counts (monthly/quarterly) for F&B outlets and storerooms.
- Ensure accurate and timely recording of all stock movements, including receipts, transfers, and wastage.
- Analyze daily sales and cost reports, investigating any variances or unusual patterns.
- Collaborate with the Executive Chef and F&B Manager to identify opportunities for cost savings and process improvements.
- Maintain recipe costing and portion control in alignment with pricing strategies.
- Assist with menu engineering analysis and recommend pricing or portion adjustments.
- Monitor supplier deliveries and ensure compliance with procurement and quality standards.
- Ensure that all receiving and storekeeping procedures are adhered to per hotel policy.
- Prepare cost forecasts, consumption reports, and variance analyses.
- Liaise with the finance team for month-end closing and audit requirements.
- Train relevant team members on inventory and cost control procedures.
