**CDP / Senior Chef - South Indian Cuisine**
**Location**:
Pune / Nashik (or as per project location under TCG Hospitality & Trijya Foods and Beverages LLP)

TCG Hospitality and Trijya Foods and Beverages LLP are leading hospitality firms with a strong presence in conceptualizing, setting up, and running successful F&B brands. We are looking for passionate and skilled culinary professionals to join our team and lead our South Indian cuisine offerings across QSR, casual dine-in, and delivery kitchen formats.
**Key Responsibilities**:
- Lead the South Indian section of the kitchen, ensuring authenticity and consistency in taste, presentation, and hygiene.
- Develop and refine recipes for various South Indian items (e.g., Dosa, Idli, Vada, Uttapam, Pongal, etc.) with innovation and regional authenticity.
- Supervise food preparation and ensure timely delivery of orders during service hours.
- Work closely with the central kitchen or outlet teams to standardize gravies, batters, chutneys, and mixes.
- Maintain food cost controls and reduce wastage without compromising quality.
- Guide junior chefs and kitchen staff; train new hires in South Indian culinary techniques.
- Ensure strict adherence to hygiene and FSSAI compliance in kitchen operations.
- Collaborate with the menu engineering and R&D teams for seasonal menu planning and innovation.
- Conduct periodic tasting and quality checks to maintain consistency across outlets.
**Required Skills & Experience**:
- Minimum 4-8 years of experience in South Indian cuisine, with at least 2 years in a leadership role (CDP or Senior Chef).
- Strong knowledge of regional variations - Tamil Nadu, Karnataka, Andhra, and Kerala cuisines preferred.
- Hands-on experience with both à la carte and bulk production (delivery models/banquets).
- Ability to scale recipes for central kitchen or multi-outlet operations.
- Team management and kitchen coordination experience is a must.
- Must be flexible with location and ready to work in rotational shifts.
**Job Types**: Full-time, Permanent
Pay: ₹20,000.00 - ₹30,000.00 per month
