As a Pastry Chef Tournant, you will oversee daily operations in a fast-paced and dynamic kitchen environment. This role requires creativity, precision, and leadership skills to ensure every dish meets the highest standards of quality and consistency.

Key Responsibilities:

  • Ensure smooth and efficient operation and control of the Pastry Shop and production daily according to established protocols.
  • Produce high-quality pastry and dessert assortment for daily menus, with attention to presentation and visual appeal.
  • Assist Executive Pastry Chef in preparing production forecasts and recording leftovers to minimize waste and maintain food costs.
  • Set up pastry display in various buffets, ensuring visually appealing arrangements.
  • Maintain knowledge of United States Public Health rules and regulations, adhering to them daily.
  • Clean the Pastry Shop according to schedule, using proper methods to prevent equipment damage.
  • Prepare the pastry galley for inspections, ensuring compliance with USPH guidelines.
  • Requisition necessary items from main stores for the pastry shop, as assigned.
  • Verify recipes and yields meet company standards.
  • Collaborate with CDP Pastry on daily pastry consumption recap, as requested by Executive Chef.
  • Provide excellent service to guests and crew members, addressing inquiries and requests promptly.
  • Attend meetings, training activities, courses, and other work-related events as required.

Qualifications and Education:

  • Minimum three years' experience as a Pastry Cook in upscale hotels, resorts, cruise ships, or convention banqueting services (shipboard experience preferred).
  • Knowledge of proper cleaning techniques, equipment usage, and maintenance requirements.
  • Completion of high school or basic education equivalency requirement.
