Job Overview

The primary objective of this role is to oversee the efficient operation of a butcher shop on a daily basis. This involves directing and supervising staff, ensuring quality and safety standards are met for meat and poultry products.

Key Responsibilities
  • Ensure that all meat and poultry used in menus are properly thawed, cut, and prepared.
  • Supervise staff to ensure correct handling and storage procedures are followed for meat and poultry.
  • Maintain knowledge of US Public Health regulations and ensure compliance.
  • Coordinate cleaning schedules for the butcher shop and thawing rooms with the Executive Chef.
  • Prepare daily butcher recaps and assist with inventory management tasks.
  • Evaluate staff performance, providing feedback and coaching as necessary.
  • Conduct regular workstation checks to ensure proper storage and minimize waste.
Financial Management Responsibilities
  • Manage costs effectively through proper use, handling, and maintenance of records, reports, supplies, and equipment.
  • Identify areas for expense reduction and establish controls to achieve cost savings.
  • Review timesheets and forward them to the Sous Chef for approval.
  • Prepare reports and letters using personal computer systems and equipment.
  • Ensure accurate requisitioning of items within acceptable timeframes.
Motivational Responsibilities
  • Monitor and manage workstation functions assigned to staff.
  • Assign duties and responsibilities to staff, evaluating their performance and making recommendations for personnel actions.
  • Provide on-the-job training and mentorship to staff to enhance their performance and prepare them for future advancement opportunities.
  • Inspect workstations and work areas to ensure efficient service delivery and adherence to established standards.
