Meat Production Specialist Job Description

This role is responsible for overseeing the daily operations of a butcher shop, ensuring smooth production and compliance with company policies.

The Meat Production Specialist will direct and supervise a team of butchers, coaches, and other support staff in collaboration with the Sous Chef to achieve business objectives.

Key responsibilities include:

  • Ensuring efficient thawing, butchering, and preparation of meat and poultry for daily menus.
  • Maintaining cleanliness and organization of the butcher shop and thawing rooms at all times.
  • Controlling costs through proper use and maintenance of records, reports, supplies, and equipment.
  • Identifying potential expense reductions and implementing cost-saving measures.

In addition to these key responsibilities, the Meat Production Specialist will also:

  • Review and analyze operational problems and establish controls to mitigate risks.
  • Manage inventory levels and requisition necessary items from freezers to thawing rooms as per the Executive Chef's schedule.
  • Ensure accurate record-keeping and reporting to facilitate informed decision-making.
