About the Role

The Senior Hospitality Manager will be responsible for overseeing the production and presentation of food items, ensuring they meet customer and company standards. This role requires strong business acumen, commitment to quality, and excellent communication skills.

Responsibilities

  • Ensure strict adherence to safety and hygiene policies at all times.
  • Monitor ingredient quantities and qualities, training staff on receiving area procedures.
  • Maintain records of hygiene-related procedures, initiatives, and incidents.
  • Coordinate with QMHSE and H&FS teams to implement policies and processes.
  • Report all QMHSE and H&FS incidents in a timely manner.
  • Exercise operational ownership over QMHSE and H&FS processes.
  • Communicate potential on-site hazards to concerned departments promptly.

Key Responsibilities

  • Food Operations
  • Deliver services as per client agreements.
  • Manage menu recipe rotation for breakfast, lunch, snacks, dinner, and special events.
  • Develop new menus, upgrade existing ones, and create special event menus.
  • Taste food before service begins.
  • Generate new ideas for promotions, festivals, and special events.
  • Plan pre-preparation areas to ensure item processing according to recipes.
  • Maintain quality, cost, presentation, and flavor standards consistently.

Organic Growth and Profitability

  • Develop and promote service excellence, retail offers, and value-added offers to drive organic sales growth.
  • Analyze reports to sustain and build site profitability, providing solutions to discrepancies.

Cash and Debtors Management

  • Accurately control, hand over, and deposit cash, maintaining specified cash control documents.
  • Raise and deliver invoices to clients as per schedules.

People Management and Training

  • Manage on-site teams, including cooks, MPWs, stewards, cashiers, and stores assistants.
  • Implement HR processes and staff welfare activities.

Communication and Client Retention

  • Stay in close communication with clients regarding services, additional business, new initiatives, and hygiene.
  • Prepare documentation for client communication.
  • Ensure 100% client retention.

Wastage Control and Cost Management

  • Maintain daily leftover records and plan production based on this data.
  • Minimize wastage and recycle excess ingredients for other dishes, adhering to highest hygiene standards.

Legal Compliances

  • Coordinate with HR, QMHSE, and Legal departments to ensure legal compliance and maintain records.

Systems Implementation and Process Management

  • Ensure systems and processes are implemented and followed as per company policy.
  • Maintain documented work processes.

Procurement and Inventory Management

  • Monitor daily raw material indents.

Qualifications

  • IHM pass out with 10 years of work experience.
