Culinary Operations Manager

Job Overview:

This role oversees and coordinates the activities of a specific workstation involved in preparing and cooking food products for various outlets based on instructions from the direct supervisor.

The Culinary Operations Manager position is an entry-level opportunity within the fleet. It is typically found on smaller class ships with fewer outlets and guests. The successful candidate will be developed to take on future management responsibilities, gain knowledge, skills, and craftsmanship, and be certified in the position by the Culinary Trainer or relevant department head.

Key Responsibilities:

  • Supervise and coordinate workstation activities in accordance with company policies, procedures, and industry standards.
  • Assign duties and responsibilities to team members and ensure proper training.
  • Control overtime and maintain accurate time and attendance records.
  • Conduct inventory of workstation storage and prepare daily requisitions for approval.
  • Ensure compliance with HACCP guidelines, sanitation, hygiene standards, and onboard safety protocols.
  • Operate equipment according to standard operating procedures and report any issues to the supervisor.
  • Maintain a safe working environment and adhere to ergonomic principles.
  • Collaborate with galley personnel to achieve productive and effective work processes.
  • Perform related duties as required.

Requirements:

  • 4-6 years of experience in upscale hotel, resort, cruise ship, or convention banqueting service.
  • Previous experience as Chef De Partie/Demi Chef De Partie is advantageous.
  • Culinary school degree required.
  • Strong leadership, communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teamwork, and conflict resolution abilities.
  • Knowledge of personalized service standards, needs assessment techniques, and guest satisfaction evaluation methods.
  • Intermediate computer software skills required.
  • Basic accounting principles understanding, including numbering flow, debits/credits, adjusting entries, and corrections.
  • Ability to write reports, establish rapport with senior officers and corporate office staff, and effectively communicate with diverse teams.
