Chef Tournant Job Description

We are seeking a highly skilled and experienced Chef Tournant to join our team. As a key member of our culinary staff, you will be responsible for overseeing the food production process and ensuring that it meets the highest standards of quality and safety.

  • You will direct, coach, support, supervise, and evaluate all direct reports to ensure they are working efficiently and effectively.
  • Must have excellent knowledge of food preparation and presentation, as well as a thorough understanding of culinary terminology.
  • Responsibilities include preparing company recipes by maintaining the quality and consistency in taste according to the instructions provided by the corporate office.
  • Must be able to work in any section of the kitchen and coordinate and supervise all team members assigned to their section.
  • Undertake recipe reviews daily and maintain recipe folders in immaculate condition.
  • Responsible for follow-through on any request within the area of responsibility received from the direct supervisor or manager on duty.
  • Control production levels and recommend ideas for improvements and better cost controlling.
  • Prepare daily electronic food requisitions needed for his section production and countercheck deliveries for its accuracy; Report any discrepancies to his immediate supervisor.
  • Maintain and ensure that Public Health regulations are followed according to company standards and expectation.
Key Responsibilities:
  • Directs, coaches, supports, supervises, and evaluates all direct reports.
  • Maintains high standards of food quality and presentation.
  • Coordinates and supervises all team members assigned to their section.
  • Prepares daily electronic food requisitions and ensures accurate delivery.
  • Ensures compliance with Public Health regulations.
Requirements:
  • A minimum of 5 years in an upscale hotel, resort, cruise ship or convention banqueting service and at least 2 years as Chef Tournant.
  • A culinary school degree is required.
  • Very strong management skills in a multicultural and dynamic environment.
  • Very strong communication, problem solving, decision making, and interpersonal skills.
