About the Job:

The Hygiene Operations Coordinator plays a crucial role in ensuring the highest standards of food safety and hygiene within our culinary operations. This position is responsible for managing the HFSMS (Hilton Food Safety Management System) across the entire FB culinary operation, working closely with production, housekeeping, and engineering teams to maintain consistency.

Key Responsibilities:
  • Assist in implementing and maintaining the HACCP HFSMS program.
  • Conduct daily FB audits, develop action plans, and report on findings.
  • Provide training and coaching to culinary and FB team members on food safety protocols.
  • Maintain effective communication with internal and external stakeholders, including guests and suppliers.
  • Identify and document malpractices, contributing to continuous improvement.
  • Familiarize yourself with fire control and safety procedures.
  • Ensure garbage room hygiene meets standards and implement approved waste classification methods.
  • Maintain relationships with customers, suppliers, government agencies, competitors, and other industry players.
  • Foster teamwork and motivation among culinary staff.
  • Collaborate with the finance team to manage monthly inventory.
  • Mentor kitchen and food beverage team members in adhering to food safety standards.
  • Schedule and conduct HACCP HFSMS meetings, following up on actions.
  • Represent the organization at designated meetings and engage with diverse external callers and visitors.
  • Interact and communicate effectively with individuals from various public and private entities.
  • Drive the Continuous Improvement Programme, leveraging a dedicated team that has contributed to achieving HFSMS and focusing on HACCP accreditation.
  • Communicate with the Executive Chef and Executive Sous Chef regarding all aspects of HFSMS HACCP, ensuring coordinated instructions and directives.
  • Streamline training requirements with HFSMS HACCP team members and ensure adherence.
  • Supervise hygiene procedures, monitor logbooks, hot and cold service holding units, and ensure proper food turnover and cleanliness.
  • Implement corrective actions when food does not meet HACCP standards.
  • Educate staff on the importance of FIFO and date labeling systems.
  • Maintain positive working relationships with other departments and employees to ensure full cooperation and commitment.
  • Perform other duties related to operations to maintain the hotel's food safety management system.
  • Carry out any other reasonable duties and responsibilities assigned.Requirements:
    • A minimum of 5 years of experience in Industrial Hygiene.
    • Certified Safety Professional (CSP) designation.
    • Excellent English communication skills, both verbal and written.
    • Proficiency in Microsoft Word and Excel.
    • Strong teamwork and interpersonal skills.
    • Ability to operate cleaning equipment effectively.
