Chef De Partie Job Description

At Hotel Polo Towers (Shillong), we are seeking a highly skilled and experienced Chef De Partie to join our culinary team. This is a permanent, full-time position that requires the successful candidate to work in a fast-paced kitchen environment, preparing and cooking high-quality pastry products in line with our head chef's menus.

Key Responsibilities:

  • Preparation and Cooking: Prepare and cook a range of pastry products, including tarts, cakes, and frozen desserts, to the highest standards.
  • Section Management: Run the pastry section of the kitchen with minimal supervision, ensuring that all dishes produced meet the quality standards set by the head chef.
  • Training and Mentoring: Supervise a commis chef during each shift, providing training and mentoring on the job to ensure that they develop the skills and knowledge required to excel in their role.
  • Quality Control: Uphold the quality standards set by the head chef across all dishes produced by the section, ensuring that every product meets the highest standards of taste, presentation, and quality.
  • Menu Suggestions: Offer menu and dish suggestions to the head and sous chef, using your knowledge of pastry and what the Hotel Polo Towers (Shillong) brand represents.
  • Stock Management: Manage stock levels throughout the shift, and report any issues with ordering or wastage to the head chef.
  • Health and Safety: Keep your work area clean and sanitary, adhering to all health and safety regulations.
  • Support: Provide support to the sous and head chefs when required, ensuring that the kitchen runs smoothly and efficiently.

Requirements:

  • Experience as a chef de partie working on a pastry section.
  • Ability to multitask and work efficiently under pressure.
  • Awareness and understanding of culinary trends, particularly within the pastry arts.
  • Knowledge of health and safety regulations.
  • Culinary school diploma preferred.
  • Drivers license and access to own transport beneficial.
