A dynamic and experienced Pastry Chef Tournant is sought after to lead our culinary team with exceptional leadership skills.

Key Responsibilities:
  • Manage the day-to-day operations of the Pastry Shop while adhering to established company policies and procedures.
  • Create visually appealing pastry and dessert assortment for daily menus, maintaining presentation standards.
  • Collaborate with CDP Pastry to prepare production forecasts and manage food costs effectively.
  • Assist in setting up pastry displays in various buffets, ensuring visual appeal.
  • Maintain comprehensive knowledge of United States Public Health rules and regulations, enforcing compliance.
  • Ensure the Pastry Shop is clean according to the established schedule, minimizing equipment damage.
  • Prepare the pastry galley for USPH inspections, ensuring readiness.
  • Requisition and transport necessary items from main stores to the pastry shop as required.
  • Adhere to company standards for recipes and yields.
  • Support the CDP Pastry in completing daily pastry consumption recaps.
  • Be aware of and acquire necessary knowledge to comply with shipboard operations, assist guests and crew members with inquiries.
  • Attend meetings, training activities, courses, and other work-related events as needed.
Qualifications and Education:
  • A minimum of three years' experience as a Pastry Cook in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
  • Demonstrate knowledge of proper cleaning techniques, requirements, and equipment use.
  • Hold a high school diploma or equivalent basic education.
