Job Title

The role of a Pastry Production Manager involves overseeing all aspects of bakery operations to guarantee efficiency, product quality, and compliance with safety standards.

This position entails managing production schedules, coordinating with procurement and sales teams, leading a team of bakers and production staff, and implementing continuous improvement processes.

Responsibilities:
  1. Ensure the smooth operation of the central kitchen, employees, facilities, and costs for optimal dispatch.
  2. Develop and implement effective production processes.
  3. Monitor and control costs on an ongoing basis.
  4. Optimize resource utilization and maintain inventory levels for raw materials and finished products.
  5. Deliver high-quality products in forecasted quantities as per SKU's to ensure delighted guest experiences.
  6. Maintain standards of cleanliness, sanitation, and hygiene at all times.
  7. Establish and maintain effective employee relations.
  8. Recruit, orientate, and coach employees as required.
  9. Conduct formal training sessions for kitchen employees.
  10. Perform special projects as assigned.
  11. Lead daily briefing meetings with the team.
  12. Carry out any other duties or responsibilities assigned by the Chief Pastry Officer.
Candidate Profile

A Hotel Management graduate with a minimum of 18 years of experience and at least 5 years of relevant leadership experience is required. The ideal candidate should be able to multitask and work effectively in a stressful environment, possessing excellent communication skills and the ability to manage a team. They must also have the capacity to plan, organize, analyze, budget, and control costs. Extensive knowledge and experience in pastry and bakery techniques are essential. The candidate should also be able to mass produce standardized products.
