Food and Beverage Sales Manager

Job Summary

We are seeking a highly skilled and experienced Food and Beverage Sales Manager to join our team at Accor. The successful candidate will be responsible for leading the sales and operations of our food and beverage outlets, ensuring exceptional customer service and driving revenue growth.

Key Responsibilities

  • Plan and manage outlet budgets, reviewing forecasts and analyzing revenue and expenditure on a monthly basis.
  • Analyze and submit month-end reports, identifying deviations from business plan goals and developing strategies to improve performance.
  • Participate in management meetings to review progress towards business plan goals and develop annual business plans for the outlet.
  • Implement and measure profit enhancement programs, working closely with the kitchen and marketing departments to drive sales and revenue growth.
  • Ensure that food and beverage costs, productivity, labor costs, and operating supply costs are in line with budget.

Outlet Operations

  • Conduct daily briefings to ensure that all team members are aware of pertinent information.
  • Supervise team members to ensure that all tasks are completed on time and to a high standard.
  • Build strong relationships with guests, remembering individual preferences to extend personalized service.
  • Handle guest complaints and comments efficiently and tactfully.
  • Manage all administration work related to cashier/bar operations and company policies.
  • Maintain department communication logs and update notice boards.
  • Check equipment and stock levels to ensure that there is no shortage of items that impact operations and guest experience.
  • Ensure that the outlet and back-of-house areas are clean and compliant with F&B sanitation and hygiene rules and regulations.
  • Maintain complete knowledge of all food and beverage services, contents, and preparation methods.
  • Ensure that health, safety, and security procedures are in place in the outlet.
  • Attend all briefings, meetings, and trainings as assigned by management.
  • Perform proper handovers and communicate with the next shift.
  • Assist other food and beverage outlets during peak times or when required.

Team Management

  • Interview, select, and recruit outlet employees.
  • Identify and develop team members with potential.
  • Conduct performance reviews with the team.
  • Monitor team members' appearance, attitude, and degree of professionalism.
  • Develop, conduct, and maintain all staff training programs for team members, focusing on their development needs and providing them with new skills to meet the changing needs of the business.
  • Prepare weekly staff schedules, taking into account anticipated business, operating budgets, and standards of service.
