Job Summary:

The Garde Manger is a highly skilled culinary professional responsible for creating artistic food displays and composing trays with precision and finesse. This role requires a deep understanding of culinary artistry, quality, and presentation, as well as the ability to work well under pressure and meet deadlines.

Key Responsibilities:

  • Prepare artistic food displays and compose trays according to specifications.
  • Design and create salads, sandwiches, canapés, desserts, and sauces that meet high culinary standards.
  • Work closely with the General Manager to ensure that all food preparations meet Air Culinaire standards.
  • Collaborate with the Expo team to prioritize orders, ensure accuracy in preparation, and maintain quality assurance.
  • Verify that food quality and specifications match kitchen-issued specifications in ACES.
  • Participate in training and directing Air Culinaire team members to ensure food safety and HACCP compliance.

Requirements:

  • High school diploma or equivalent required; experience in new culinary trends preferred.
  • 2-3 years of experience in a kitchen environment within a catering or fine dining establishment.
  • Current Safe Food Handling Certificate preferred.
  • Demonstrated ability to take orders and follow through, as well as work well with others in a team-driven, fast-paced environment.
  • Energetic, enthusiastic, creative, and highly motivated to assist in food preparation and presentation.

Operational Demands:

  • Flexibility to work weekends and holidays.

Language Skills:

  • Ability to read and interpret documents such as client orders, safety rules, operating and maintenance instructions, and procedure manuals.

Mathematical Skills:

  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

Reasoning Ability:

  • Ability to apply good judgment and understanding to carry out instructions furnished in written, oral, or diagram form.

Physical Demands:
