Job Description:

  • Oversee the operation of the meat department, ensuring adherence to established standards and company policies.
  • Direct and supervise staff members, providing guidance and coaching to ensure quality service is met.
  • Responsible for receiving, storing, and preparing all meats and poultry for daily menus.
  • Maintain knowledge of food safety regulations, ensuring compliance in daily operations.
  • Ensure cleaning and organization of the meat department and storage areas according to a schedule, minimizing equipment damage.
  • Prepare the meat department and storage areas for inspections, adhering to announced or unannounced visits.
  • Monitor product yields and portions according to established guidelines, effectively utilizing trimmings or disposing of them properly.
  • Complete daily reports as required by management.
  • Assist with inventory management, taking stock of meat and poultry storage rooms as needed.
  • Ensure staff members are punctual, properly attired, and maintain personal appearance and hygiene according to company policy.
  • Provide assistance and information to guests and colleagues, demonstrating awareness of operational procedures.
  • Attend meetings, training sessions, and other work-related activities as required.

Required Skills and Qualifications:

  • Minimum two years' experience as a head butcher in an upscale establishment (shipboard experience preferred).
  • Culinary school degree is required.
  • Strong leadership skills in multicultural environments.
  • Excellent communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teambuilding, and conflict resolution skills.
  • Knowledge of principles and processes for providing personalized services, including needs assessment techniques and guest satisfaction evaluation techniques.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
  • Intermediate computer software skills required.
  • Understanding of basic accounting principles, including financial reporting and budget analysis.
  • Ability to write reports and business correspondence, establishing a good rapport with management and stakeholders.
