Job Title: Master Meat SpecialistAs a Master Meat Specialist, you will oversee the smooth and efficient operation of our Butcher Shop. You will direct, coach, and supervise staff members, and evaluate their performance.Your key responsibilities include thawing, butchering, and preparing meat and poultry for daily menus, adhering to strict USPH regulations. This requires a complete knowledge of USPH rules and regulations, ensuring they are followed diligently every day.You must also ensure the cleaning of the Butcher Shop and thawing rooms according to the Executive Chef's schedule, minimizing equipment damage. Prepare the Butcher Shop and thawing rooms for any announced or unannounced USPH inspections.Additional duties include storing received meats and poultry in freezers on loading days, requisitioning and transporting necessary items from freezers to thawing rooms as per the Executive Chef's thawing schedule. Ensure product yields and portions align with the Butcher Manual, and effectively utilize or dispose of trimmings.Complete Daily Butcher Recaps as required by the Executive Chef. Assist the Inventory Manager with taking inventory of all meat and poultry storage rooms as needed by the Food & Beverage Director. Ensure Butcher Shop personnel arrive on time, dressed in proper uniforms, with special attention given to those working in public areas.Personal appearance and hygiene must adhere to company policy. Be present during early standby when the ship is subject to a USPH inspection. Stay informed about and acquire necessary knowledge to comply with the ship's standard operations, assisting guests and crew members with inquiries as needed.Attend meetings, training activities, courses, and other work-related activities as required. Perform related duties assigned by your supervisor or management.
