Organization: Acme Group is a leader in sustainable solar energy solutions and reduce environmental impact. In new venture, Acme Cleantech is working on sustainable foods especially fungal protein to cater the need of protein deficient population of India.

Qualification & Experience:

- M.Sc. in Food Technology or B. Tech in Food Technology with 4 - 6 years of experience- R&D Candidate having 5 – 6 years’ experience in developing various food products in categories:- Nutraceutical products, extruded products, foods for special dietary requirement, nutritional supplements, Dairy products & beverages.- Competent knowledge of Food Industry. Special consideration for experience in Plant based proteins. Must have experience in managing Food/ Nutrition projects, preferably plant proteins.- Leadership in all phases of product development and commercialization process

Job Responsibilities/Duties

- Responsible for New product development in Nutraceutical products, foods with high protein content, nutritional supplements, dairy, beverages with protein fortification.- Proof point testing of technical solutions in applications and hands-on development of new concepts and formulations. Applies scientific and engineering principles in research & development, market research, recipe optimization, regulatory, production technology (pilot & plant), packaging and processing.- Liaising with other functional ingredient suppliers and exploring the interaction of ingredients and their impact on the final product. Including ingredients such as Proteins, Fibers, Starches, stabilizers, flavors.- Candidates has to play a supporting role in ongoing business-related R&D initiatives with OEMs, Research Institutes and internal stakeholders.- Provide, analyze, and execute cost-savings/ optimization ideas and working closely with internal cross-functional team and external suppliers.- Application of Regulatory principles i.e. FSSAI (Must-to-Have) &/or EFSA (Good-to-have) to food design and regulatory approvals for new/existing products.- Conducts & controls:- Shelf-life studies on new products, Flavour, texture and colour measurements, Rheological and physicochemical property evaluations, Nutritional composition analyses and microbiological safety etc.- Conduct food sensory evaluations for new/ existing product items- Manages BOM, cost structures, alternative ingredients and their impact on final food product design, claims & commercials.- Develops & creates content for: Marketing & promotional tools- Customer Query/Complaint handling- Labels & Health Claims- Food safety compliance &Audits
