Supervise and mentor kitchen staff, promoting efficiency, teamwork, and adherence to recipes. Source and manage ingredients with attention to freshness, quality, and seasonal availability. Ensure consistent plating, portioning, and presentation across all dishes. Adapt recipes and techniques as needed to meet evolving menu requirements and guest preferences. Requirements Requirements: Minimum 2–5 years of hands-on experience in a South Indian or Kerala-style kitchen. Expertise in traditional cooking methods including steaming, tempering, roasting, and slow-cooking. In-depth knowledge of regional spice blends, coconut-based gravies, tamarind, curry leaves, and other core ingredients. Proven experience in preparing both vegetarian and non-vegetarian South Indian dishes. Familiarity with commercial kitchen equipment and adherence to food safety standards. Ability to multitask effectively during high-pressure service periods while maintaining consistency. Basic proficiency in English or Hindi (Malayalam or Tamil is a plus).
