We’re hiring aHead of Central Kitchen – Production & Dispatchtostandardize recipes at scale, control costs, and run clockwork dispatchto multi-city outlets.Location:BangaloreKey Responsibilities Production Leadership:Own daily/weeklyMPS & MRP; plan batches, line balancing, and shift rosters to hit demand without over-prep. Quality & SOPs:Enforcerecipe/portion SOPs, CCPs, HACCP/FSSAI, taste panels, and corrective actions; rundaily line checks. Yield & Cost Control:Trackyields, GRNs, variances, spoilage, and packaging cost; drivecontinuous improvementto hit targets. Dispatch & Cold Chain:Runpick–pack–label–seal; ensureon-time dispatch, route plans, temperature logs, and documentation. People & Training:Hire and developBOH/production leads; run skills matrices, audits, and performance reviews. Procurement & Vendor Mgmt:Source to spec, negotiate rates, qualify alternates; maintainpar levelsand service SLAs. Compliance & Safety:LeadFSSAI, fire & safety, pest control, equipment maintenance; close audit non-conformities fast. Systems & MIS:OwnERP/POS indents, batch tickets, barcodes, anddaily MIS(prep vs sold, yields, wastage, labour hrs). Scale & NPD Industrialization:Convert R&D intorepeatable, scalable processes; pilot and roll out to new kitchens/cities.KPIs You’ll Own On-Time Dispatch:≥98% Gross Food Cost:within target (brand benchmark) Yield Variance:≤±3%vs. SOP Spoilage/Wastage:of production value Hygiene Score (HACCP/FSSAI):95%+in monthly audits Downtime:of production hoursQualifications & Skills 6–10 yearsincentral/base kitchenleadership forQSR/multi-outletbrands. Deep command ofproduction planning, yields, cold chain, and scale SOPs. Hands-on withHACCP/FSSAI, utilities, and maintenance schedules. Strong withERP/Excel, MIS, and root-cause/Kaizen mindset.
