  • Monitor foodquality and consistency to ensure that the food presented to ourguest is of the highest qualitystandard
  • Perform yield testing productidentification and ensure that rotation and labelling adhere towritten guidelines for food producespecifications
  • Monitor dry and general storesdaily ensure that all perishable produce delivered to the hotelfollow the written guidelines for product specifications. Givespecial attention to all imported products/seasonalproducts
  • Conduct weekly kitchen walkthrough andliaise with Executive Steward to ensure that the kitchen sanitationand Engineering maintenance and standards aremet
  • Perform hands on as and when required todemonstrate a variety of international cuisine through foodtasting
  • Monitor all food items ordered toensure minimal wastage and proper product utilization is carriedout at all times
  • Ensure that no unauthorizedpersonal enters the kitchen at any point in time and that those whoenter follow the guideline set forth by the occupational healthdepartment
  • Ensure that all equipment andperishable items are stored in its designated place and is done inthe most hygienic manner
  • Work closely withreceiving department and storeroom to ensure that received goodsare of the standard quality and according to hotelsspecifications
  • Update recipe costing and menuplanning forpromotions
