Job Summary:

The Demi Chef de Partie (DCDP) / Commis I – Continental is responsible for preparing, cooking, and presenting high-quality dishes within the continental section of the kitchen. The role supports the Chef de Partie and ensures consistency, hygiene, and efficiency in food production, maintaining the 5-star standards of Gokulam Grand Turtle on the Beach, Kovalam.

Key Responsibilities:

  • Prepare and cook continental dishes according to standard recipes and presentation guidelines.
  • Assist in the daily kitchen operations under the guidance of the CDP or Sous Chef.
  • Ensure all food is prepared, portioned, and presented on time and to hotel standards.
  • Maintain proper hygiene and sanitation in the workstation and storage areas.
  • Monitor and control food waste, portion sizes, and stock rotation (FIFO).
  • Assist in receiving and storing kitchen supplies and raw materials.
  • Follow all food safety, HACCP, and hygiene protocols.
  • Support in menu planning, mise-en-place, and buffet or à la carte service.
  • Cooperate with team members to ensure smooth kitchen operations during busy periods.
  • Perform other duties assigned by senior chefs.

Qualifications & Skills:

  • Diploma or degree in Hotel Management / Culinary Arts preferred.
  • 3–6 years of experience in a similar role (4/5-star hotel experience preferred).
  • Strong knowledge of continental cuisine and modern cooking techniques.
  • Excellent time management and teamwork skills.
  • Good communication and organizational skills.
  • Passion for food presentation and creativity.
