Job Summary:
The Commis II (South Indian) is responsible for assisting in the preparation and presentation of authentic South Indian dishes, maintaining high standards of food quality, hygiene, and consistency in accordance with the hotel's culinary standards and guest satisfaction goals.
Key Responsibilities:
- Assist the Chef de Partie in preparing and cooking traditional South Indian dishes such as dosa, idli, vada, sambar, chutneys, and regional specialties.
- Ensure mise-en-place is prepared as per the menu requirements and kitchen standards.
- Maintain proper portion control, consistency, and presentation of all dishes.
- Follow standard recipes and minimize food wastage.
- Maintain cleanliness and hygiene in all kitchen areas as per HACCP and hotel standards.
- Check and ensure the freshness and quality of ingredients before use.
- Properly store and label all food items in designated storage areas.
- Support senior chefs during busy operations and buffets.
- Adhere to all safety, sanitation, and hygiene policies and procedures.
- Report any maintenance or equipment issues to the supervisor immediately.
- Perform other kitchen duties as assigned by the Chef de Partie or Sous Chef.
Qualifications & Experience:
- Diploma / Certificate in Hotel Management or Culinary Arts.
- Minimum 1–2 years of experience in a similar role in a 4/5-star hotel or reputed restaurant.
- Strong knowledge of South Indian cuisine and regional dishes.
- Good communication and teamwork skills.
- Ability to work in a fast-paced environment with attention to detail.
