Assistant Miller
Location: Musalgaon MIDC, Sinnar
Department: Milling
Reporting To: Head Miller/Director
Role Objective
To assist in managing flour milling operations by ensuring efficient production, wheat procurement, quality compliance, and workforce coordination while maintaining food safety and regulatory standards.
Key Responsibilities
- Support daily milling operations, including wheat cleaning, blending, conditioning, and grinding.
- Monitor and optimize machine performance (roller mills, plansifters, purifiers, dampeners, etc.) to ensure smooth production cycles.
- Control moisture levels, segregation, and flour quality as per product specifications.
- Assist in wheat procurement, godown/raw material management, and inventory control.
- Implement process automation and calibration to improve milling efficiency and reduce waste.
- Maintain compliance with
HACCP, FSSAI, ISO 22000, and food safety protocols. - Conduct routine quality tests (moisture, ash, gluten, protein, falling number, etc.) to ensure product consistency.
- Coordinate with cross-functional teams (Quality, Dispatch, Maintenance) for seamless production flow.
- Supervise shift operations, allocate workforce, and ensure safety protocols are followed.
- Prepare production reports, analyze process data, and suggest improvements.
- Train mill operators and helpers on machine handling, hygiene, and best practices.
Required Qualifications
- B.Tech in Food Technology
(or equivalent) - Diploma/PG in Flour Milling Technology
from a recognized institute (ISMT Mysuru preferred).
Experience
- 1–3 years of hands-on experience in flour milling/grain processing.
- Exposure to wheat procurement, machine calibration, and food safety audits preferred.
- Freshers from ISMT with relevant internship/training experience can also apply.
Skills & Competencies
- Technical knowledge of milling equipment (roller mills, plansifter, purifiers, dampners, destoner, scourer, etc.)
- Strong knowledge of food safety systems (HACCP, FoSTaC, ISO
- Proficiency in moisture control, wheat blending, and quality analysis.
- Process optimization and problem-solving mindset.
- Good leadership, team handling, and decision-making ability.
- MS Excel/Office knowledge for reporting and analysis.
- Languages: English, Hindi, Marathi (preferred).
