**Job Summary**:
The **Food and Beverage Controller** is responsible for ensuring cost control, inventory management, and financial analysis of the hotel's food and beverage operations. The role involves monitoring purchasing, storage, and usage of F&B items to maintain profitability while ensuring quality and compliance with company standards.
**Key Responsibilities:1. Cost Control & Financial Management**
- Analyze and control all F&B costs, ensuring alignment with budgeted figures.
- Prepare cost analysis reports, variance reports, and profitability analysis.
- Develop and implement effective cost-reduction strategies without compromising quality.
- Conduct monthly inventory checks and reconciliation of food, beverage, and general supplies.
- Monitor and analyze wastage, spoilage, and stock discrepancies.
**2. Inventory Management & Stock Control**
- Supervise daily stock movements, ensuring proper receiving, storage, and issuance of F&B items.
- Implement and oversee inventory control systems, ensuring accurate stock levels.
- Conduct regular audits of F&B stores and outlets to verify stock records..
**3. Procurement & Supplier Coordination**
- Work closely with the purchasing department to negotiate with suppliers for best pricing.
- Ensure all procurement follows the hotel’s quality and cost guidelines.
- Monitor supplier performance and product quality to maintain standards.
**4. Menu Engineering & Pricing**
- Assist F&B and culinary teams in menu pricing by analyzing food and beverage costs.
- Conduct recipe costing and ensure profitability of menu items.
- Regularly update menu costs based on market price fluctuations.
**5. Compliance & Reporting**
- Ensure all F&B financial reports are submitted accurately and on time.
- Maintain proper documentation of purchase records, invoices, and cost reports.
- Ensure compliance with hotel policies, local food safety regulations, and financial audit requirements.
**6. Collaboration & Team Support**
- Work closely with the Executive Chef and F&B Manager to optimize food cost without compromising quality.
- Train F&B and store personnel on cost control measures and inventory management.
- Provide financial insights and recommendations to improve profitability.
**Qualifications & Experience**:
- Bachelor’s degree in Finance, Accounting, Hospitality Management, or a related field.
- Minimum **1-3 years** of experience in F&B cost control in a luxury hotel or hospitality setting.
- Strong knowledge of inventory management, cost control, and purchasing procedures.
- Proficiency in financial software, inventory management systems
- Excellent analytical and problem-solving skills.
- Strong communication and negotiation abilities.
Pay: ₹30,297.39 - ₹50,269.14 per month
