A Chef de Partie (CDP) and Demi Chef de Partie (DCDP) are both roles in the kitchen responsible for preparing and cooking food, but the CDP has more independent management responsibilities, while the DCDP assists the CDP. In a sushi context, both roles would be involved in preparing various sushi dishes, including maki, nigiri, sashimi, and specialty rolls. Key Responsibilities of a Sushi CDP:

- **Independent Section Management**: The CDP is responsible for managing a specific section of the sushi station, ensuring smooth workflow and efficient preparation.
- **Ingredient Preparation**: Preparing and portioning sushi ingredients like rice, fish, seafood, and vegetables according to established recipes and standards.
- **Dish Preparation and Presentation**: Preparing and assembling sushi dishes to the highest quality and visual standards.
- **Stock Management**: Responsible for stock checks, ordering, and inventory management within their section.
- **Team Leadership**: Supervising and training junior sushi chefs or cooks.
- **Quality Control**: Ensuring adherence to food safety and hygiene standards.
- **Menu Development**: Assisting with new recipe development and menu planning.
- **Maintenance and Cleaning**: Implementing and executing proper maintenance and cleaning procedures in their station.

Key Responsibilities of a Sushi DCDP:

- **Assisting the CDP**: Supporting the CDP in all aspects of sushi preparation, including food preparation, cooking, and plating.
- **Ingredient Preparation**: Preparing and portioning sushi ingredients.
- **Dish Preparation**: Assisting with the preparation of various sushi dishes.
- **Stock Management**: Assisting with stock checks and ordering.
- **Team Support**: Providing support to the CDP and other team members.
- **Food Safety and Hygiene**: Ensuring adherence to food safety and hygiene standards.
- **Cleaning and Maintenance**: Assisting with maintenance and cleaning procedures.

In essence, a CDP is more of a lead chef in a specific area, while a DCDP is a supporting role, assisting the CDP in the daily operations of the sushi station.

Pay: ₹30,000.00 - ₹40,000.00 per month

Schedule:

- Day shift
- Rotational shift

Supplemental Pay:

- Performance bonus

Work Location: In person
