**Job Title**: Sous Chef - South Indian Cuisine

**Job Summary**:
**Key Responsibilities**:
- Assist the Head Chef in planning, preparing, and executing authentic South Indian dishes.
- Supervise and train commis, cooks, and other kitchen staff.
- Ensure consistency in taste, presentation, and portioning across all South Indian menu items.
- Innovate and contribute new recipes while maintaining authenticity and regional diversity (Tamil, Kerala, Andhra, Karnataka cuisines).
- Monitor inventory levels, maintain stock rotation, and minimize wastage.
- Ensure adherence to hygiene, sanitation, and food safety standards (HACCP/ISO).
- Coordinate with service staff to maintain smooth kitchen and dining operations.
- Assist in menu planning, costing, and seasonal specials.
- Take charge of the kitchen in the absence of the Head Chef.
**Requirements**:
- Proven experience (5-8 years) in South Indian cuisine with at least 2 years in a supervisory/lead role.
- Strong knowledge of traditional South Indian dishes including idlis, dosas, vadas, curries, sambar, rasam, biryanis, and Kerala/Tamil/Andhra specialties.
- Ability to manage a team and work under pressure in a fast-paced environment.
- Strong organizational and leadership skills.
- Diploma/Degree in Culinary Arts or Hotel Management preferred.
- Flexibility to work shifts, weekends, and holidays.
