Job Responsibilities
Working hands on to prepare food and provide prompt, courteous and accurate service to all the customers (both internal and external) as per the set standards.
- Prepare all required mis en place that is required for a smooth kitchen operation and ensures that the section is set prior to service.
- Ensure hygiene and cleanliness of his/her area at all times.
- Assist Head Chef in implementing organizational standards on food quality, preparation and presentation.
- Assist Head Chef in carrying out implementation of HACCP / ISO related activities and documentation
- Assists the chefs in display and set up of various special themes.
- Responsible for maintaining all kitchen equipments in his / her area are in good working condition and to follow up with engineering for any defects rectification.
- Maintain awareness of food cost, ensure minimum spoilage and wastage at all times in order to achieve budgetary cost targets
- To keep immediate supervisor promptly and fully informed of all problems or unusual matters of significance.
- Perform all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve the overall objectives of this position.
Job Requirements
Knowledge/Skills:
- Thorough knowledge of different cuisines, (within the respective sections) cooking styles, hygiene & safety standards
- Techniques of meat and vegetable fabrication (for butchery / Indian & Western)
- Techniques of baking and pastry arts
- Techniques of food presentation and display
- Techniques in quantity food production
- Food Costing and Menu pricing techniques
Education
- Diploma in Hotel Management / FCI / Apprenticeship and specialized training from a culinary institute
Experience
- 1-3 year working experience in a reputed organization with good track record
