**Job Summary**
**Key Responsibilities**
- Prepare authentic **Kolkata-style Biryani** with traditional flavours
- Cook other Mughlai and North Indian dishes like kebabs, korma, rezala, chaap, parathas, etc.
- Maintain the original taste, aroma, and texture as per Kolkata culinary heritage.
- Plan and prepare daily kitchen mise en place (prep).
- Ensure portion control, quality, and consistency in all dishes.
- Train and guide kitchen helpers and junior chefs in proper cooking techniques.
- Maintain cleanliness and hygiene as per FSSAI standards.
- Control wastage of raw materials and monitor kitchen inventory.
- Coordinate with the purchase team for ingredient sourcing, especially authentic Kolkata biryani spices.
- Innovate and suggest special biryani variations for special events or promotions.
**Skills & Requirements**
- Minimum **3-5 years** of experience in Indian kitchens, preferably in biryani specialty restaurants.
- In-depth knowledge of **Kolkata Style Biryani**—both chicken and mutton.
- Experience in tandoor or Mughlai dishes will be an advantage.
- Good understanding of kitchen hygiene, safety, and SOP compliance.
- Ability to handle high-volume orders efficiently.
- Positive attitude, leadership qualities, and team management skills.
Pay: ₹17,000.00 - ₹25,000.00 per month
