A Food Technologist working in a sweet production unit is responsible for developing, improving, and ensuring the quality of sweet and savories products. This role involves researching ingredients, formulating recipes, optimizing production processes, ensuring food safety standards, and troubleshooting any issues in the production line. The Food Technologist will work closely with production teams, quality control, and R&D to create high-quality, consistent, and innovative sweet products.
**Key Responsibilities**:
- **Product Development**:
- Research and develop new sweet product formulations
- Test and refine recipes to improve taste, texture, appearance, and shelf life.
- Collaborate with the R&D team to innovate and create new products based on market trends and consumer preferences.
- Adapt recipes to meet dietary needs (e.g., sugar-free, gluten-free, vegan options) or regulatory requirements.
- Ensure that all formulations are cost-effective and feasible for mass production.
- **Quality Control and Assurance**:
- Monitor and ensure the consistent quality of raw materials, finished products, and the production process.
- Conduct quality checks at various stages of production, from raw material inspection to finished product testing.
- **Develop and maintain standard operating procedures (SOPs)** for the production process, ensuring food safety and quality standards are met.
- Analyze product quality data, identify trends or issues, and implement corrective actions as needed.
- Ensure compliance with food safety regulations, including hygiene practices, labeling requirements, and allergen management.
- **Production Process Optimization**:
- Work with the production team to optimize manufacturing processes, improving efficiency and reducing waste.
- Troubleshoot any production issues related to product consistency, texture, or taste.
- Develop process improvements and implement them to increase product yield, reduce production costs, or enhance product quality.
- Support the scaling-up of new products from the laboratory or pilot scale to full production capacity.
**Skills and Qualifications**:
- **Educational Requirements**: Bachelor’s degree in Food Technology, Food Science, or a related field. A Master’s degree or specialized certifications may be an advantage.
- **Experience**: Proven experience in food technology or product development, preferably in the sweet or confectionery industry.
- **Technical Skills**: Knowledge of food processing techniques, ingredient functionalities, food safety regulations, and quality assurance protocols. Familiarity with food analysis and testing equipment.
- **Problem-Solving Skills**: Ability to identify and troubleshoot production issues, improve processes, and innovate new solutions.
- **Creativity**: Strong ability to develop new product concepts, experiment with ingredients, and innovate in recipe formulation.
- **Attention to Detail**: High attention to detail when conducting quality checks and ensuring product consistency.
- **Communication Skills**: Strong written and verbal communication skills, with the ability to work with diverse teams and present technical information clearly.
- **Project Management**: Ability to manage multiple projects, prioritize tasks, and meet deadlines in a fast-paced environment.
**Work Environment**:
- Food Technologists in a sweet production unit typically work in production facilities, laboratories, and offices. They may need to wear appropriate personal protective equipment (PPE) while on the production floor.
- The work may involve occasional shifts outside of regular business hours to oversee production or address urgent issues.
- The role may require standing for long periods, as well as occasionally lifting or moving ingredients and materials.

Compensation for this role will vary depending on the experience, qualifications, and location, but it typically includes a competitive salary along with potential benefits such as health insurance, performance bonuses, and other incentives.
