**Position**: Sous Chef cum Manager
**Department**: Dietary Services, Cafeteria, and Related Facilities
**Reports To**: Head of Operations
**Position Overview**:
The Sous Chef cum Manager will oversee the smooth functioning of the hospital dietary services, cafeteria, and related food service facilities at the **Chandrapur Cancer Care Foundation**.
**Key Responsibilities**:
**1. Culinary Management**:
- Assist in the preparation of meals for patients, staff, and visitors, ensuring dietary requirements and health guidelines are met.
- Supervise and mentor kitchen staff, providing hands-on support during meal preparation.
- Ensure high standards of food hygiene and sanitation are maintained in the kitchen and dining areas.
- Develop and implement standard operating procedures for kitchen operations, including meal preparation and serving.
- Plan and prepare specialized diet plans and meals for patients with specific medical conditions, as per doctor and dietician recommendations.
**2. Operational Management**:
- Oversee daily operations of the hospital dietary services and cafeteria, ensuring timely and efficient service.
- Manage the day-to-day operations of the kitchen, food service, and related facilities.
- Ensure proper stock levels and inventory management, including ordering and receiving supplies.
- Maintain control over food quality, quantity, and presentation, ensuring all food is prepared to the highest standards.
- Manage food waste, ensuring all food is stored, prepared, and disposed of correctly.
**3. Staff and Team Management**:
- Supervise, train, and motivate kitchen and cafeteria staff, ensuring effective teamwork and a positive working environment.
- Prepare and implement work schedules, ensuring adequate staffing during peak hours.
- Conduct regular performance reviews and provide feedback to improve team performance.
**4. Compliance and Safety**:
- Ensure compliance with food safety, hygiene standards, and all relevant health regulations.
- Monitor and enforce the use of personal protective equipment (PPE) among staff.
- Maintain necessary records for food safety, dietary services, and cafeteria operations.
**5. Budget and Cost Control**:
- Monitor and control costs related to food supplies, kitchen operations, and staffing.
- Assist in preparing budgets and reports related to the dietary services department.
- Identify opportunities for cost savings without compromising on quality or patient care.
**Skills and Qualifications**:
- A degree or diploma in Culinary Arts, Hospitality Management, or related field is preferred.
- A degree in Dietetics or Food Science is a plus.
- Minimum 3-5 years of experience in a culinary role, with at least 2 years in a management position in a hospital or institutional setting.
- Experience in managing food service operations, preferably in a healthcare environment.
- Strong culinary skills with a focus on dietary needs, nutrition, and food safety.
- Excellent managerial skills, including staff supervision, team building, and conflict resolution.
- Knowledge of food safety and sanitation standards, with the ability to enforce compliance.
- Ability to plan, organize, and prioritize tasks in a fast-paced environment.
- Strong communication and interpersonal skills.
