**Job Summary**:
The Demi Chef de Partie (DCDP) - Halwai is responsible for preparing and managing the production of high-quality Indian sweets, desserts, and other traditional confectionery items. This role involves ensuring consistency in taste, quality, and presentation while maintaining food safety and hygiene standards.

**Key Responsibilities**:

- **Production of Indian Sweets**:

- Prepare a variety of traditional and contemporary Indian sweets, desserts, and snacks (e.g., gulab jamun, jalebi, barfi, rasgulla, laddoos).
- Experiment and develop new recipes while maintaining authenticity and innovation.
- Ensure the use of high-quality ingredients and adherence to standardized recipes.
- **Section Management**:

- Manage the halwai section during operations, ensuring timely production and delivery.
- Coordinate with other kitchen sections for seamless service.
- Supervise and guide junior staff working in the halwai section.
- **Hygiene & Food Safety**:

- Ensure all dishes are prepared in compliance with food safety and hygiene standards, including HACCP.
- Maintain cleanliness and organization in the halwai section, including equipment and storage areas.
- Monitor and maintain appropriate storage of perishable items to ensure freshness.
- **Inventory & Stock Management**:

- Assist in managing inventory for the halwai section, including procurement and storage of ingredients like milk, sugar, nuts, and spices.
- Minimize wastage by practicing proper portion control and stock rotation.
- Report stock shortages and assist in ordering supplies when needed.
- **Team Collaboration & Training**:

- Train junior kitchen staff in traditional halwai techniques and recipes.
- Collaborate with the Sous Chef and other team members to plan menus and execute special events.
- Contribute to a positive and team-oriented kitchen environment.

**Requirements**:

- **Education**: Certification or diploma in culinary arts or a related field is an advantage.
- **Experience**:

- Minimum 4-5 years of experience specializing in Indian sweets and desserts, with at least 2 years in a similar role.
- Experience in a 4-star or 5-star hotel is preferred.
- **Skills**:

- Expertise in traditional Indian sweet-making techniques and recipes.
- Ability to innovate and develop modern variations of classic dishes.
- Strong understanding of food safety, hygiene, and HACCP standards.
- **Attributes**:

- Passion for creating authentic and high-quality Indian desserts.
- Attention to detail in taste, texture, and presentation.
- Ability to work efficiently under pressure and in a fast-paced environment.

**Job Types**: Full-time, Permanent

Pay: ₹25,000.00 - ₹30,000.00 per month
