Job Description: Cheese Maker

Key Responsibilities:

- Cheese Production: Oversee all aspects of cheese making, including milk processing, curd formation, molding, salting, and aging, while adhering to established recipes and quality standards.
- Milk Handling: Receive, test, and process raw milk from local dairy farms, ensuring freshness and quality for cheese production.
- Culturing and Ripening: Monitor and control the fermentation and ripening processes to achieve desired flavor profiles and textures in the finished cheeses.
- Equipment Operation: Operate cheese making equipment, including vats, curd knives, presses, and aging caves, while maintaining cleanliness and safety protocols.
- Quality Assurance: Conduct regular quality checks throughout the cheese making process, including pH testing, moisture analysis, and sensory evaluations, to ensure consistency and excellence in the final product.
- Sanitation and Food Safety: Maintain a clean and sanitary work environment, following food safety guidelines and sanitation procedures to prevent contamination and ensure compliance with regulatory standards.
- Inventory Management: Manage inventory of cheese making supplies, including cultures, rennet, additives, and packaging materials, and coordinate ordering as needed to support production schedules.
- Record Keeping: Keep detailed records of cheese making processes, including batch records, aging logs, and quality control documentation, to track production metrics and ensure traceability.
- Collaboration: Work closely with other members of the cheese making team, as well as dairy farmers, suppliers, and quality control personnel, to achieve production goals and maintain product integrity.
- Continuous Improvement: Stay informed about developments in cheese making techniques, technology, and industry trends, and seek opportunities for process optimization and product innovation.

Qualifications:

- Knowledge of Cheese Making Principles: Familiarity with cheese making techniques, including milk chemistry, microbial cultures, curd formation, and affinage, is highly desirable.
- Attention to Detail: Strong attention to detail and a commitment to maintaining quality and consistency in cheese production, from raw milk to finished product.
- Food Safety Certification: A valid food handler's permit or willingness to obtain certification in food safety and sanitation is required.
- Physical Stamina: Ability to lift and move heavy objects, stand for extended periods, and perform repetitive tasks in a production environment.
- Teamwork and Communication: Excellent communication and interpersonal skills, with the ability to work collaboratively as part of a team and effectively communicate with colleagues and stakeholders.
- Flexibility: Willingness to work a flexible schedule, including early mornings, evenings, weekends, and holidays, as needed to support production and operational needs.
