Executive Chef

We are seeking a talented and experienced Chef De Cuisine to helm our specialty restaurant at Fairmont Mumbai. The ideal candidate should possess a deep understanding of Asian cuisine, with a specialization in Chinese and Cantonese culinary arts.
Key Responsibilities:- Develop and implement innovative menu designs that showcase artistic culinary talents
- Lead the local market restaurant industry with trend-setting food offerings, driving growth and customer satisfaction
- Strive to advance knowledge and skills, sharing best practices with the team
- Make key operating decisions that impact the F&B offering, ensuring seamless execution
- Train and develop a diverse and professional team to deliver exceptional dining experiences
- Ensure food culture and food safety standards are met, maintaining a clean and safe kitchen environment
- Collaborate with the hotel operations team to drive business growth and success
- Oversee daily culinary operations, setting direction for the team and menu development
- Work closely with the PR and Marketing team to grow Garrison revenues through social and other marketing campaigns
- Prepare financial forecasts and budgets for the Restaurant team, ensuring accurate ordering and scheduling
- Implement proper inventory control and ordering practices, minimizing waste and optimizing resources
- Set and oversee goals identified through employee engagement surveys, driving team performance and satisfaction
- Lead initiatives to guarantee Guest Satisfaction Scores are achieved, continuously improving the dining experience
- Train and develop culinary team members, focusing on team lead food presentation and preparation methods
- Maintain the kitchen in optimum condition, ensuring a clean and safe environment
- Support and provide direction for menu development and implementation, considering banquet concept food trends, Guest Satisfaction results, and food cost
- Participate actively in kitchen and department head meetings, driving collaboration and communication
- Creative, self-motivated, detail-oriented, and well-organized individual
- Product and quality obsessed, with good knowledge in menu engineering and design
- Team player with the ability to train, coach, and motivate employees
- Experience leading a fast-paced culinary operation, with strong leadership and communication skills
- Previous experience scheduling a large culinary team, with understanding of labor costs and productivity
- Versed in calculation of food cost, with experience conducting food inventories and understanding of inventory turnover
- Minimum 5 years in a similar position
