  • Directs, coaches, and supervises all direct reports in the butcher shop.
  • Responsible for thawing, butchering, and preparing all meat and poultry for daily menus.
  • Ensures compliance with US Public Health Rules and Regulations.
  • Cleans the butcher shop and thawing rooms according to the Executive Chef's schedule.
  • Prepares the butcher shop and thawing rooms for inspections.
  • Stores received meats and poultry into freezers and requisitions necessary items from freezers to thawing rooms.
