Job Overview

The Head of R&D for Beverages and Nutrition is a leadership role responsible for leading the formulation, research, testing, and innovation of all beverage products. This leader will establish R&D processes, manage external labs and suppliers, ensure regulatory compliance, and build a future-facing product pipeline.

This role is foundational — working directly with founders, marketing, and operations teams to turn concepts into commercially successful beverages.

Key Responsibilities
  1. Define the innovation roadmap for beverages aligned with brand vision.
  2. Build and lead an R&D function (scientists, food technologists, lab partnerships).
  3. Stay ahead of global beverage trends, functional ingredients, and health sciences.
  4. Formulate and optimize beverages for nutrition, flavour, cost, and shelf-life.
  5. Innovate with functional ingredients (proteins, adaptogens, botanicals, natural sweeteners, probiotics, etc.).
  6. Run pilot trials, sensory studies, and consumer testing before scaling.
  7. Ensure FSSAI compliance for all products and validate nutrition/health claims.
  8. Manage food safety testing, certifications, and quality standards.
  9. Partner with manufacturing units and co-packers to scale formulations.
  10. Solve for stability, packaging, and supply chain compatibility.
  11. Work closely with Marketing for claims, positioning, and product storytelling.
  12. Collaborate with Operations/Finance on cost optimization and sourcing.
  13. Present innovation updates to founders and investors.

Desired Profile

  1. Education: Master's/PhD in Food Technology, Food Science, or Nutrition.
  2. Proven track record of developing and launching beverage products (functional beverages a plus).
  3. Expertise in food chemistry, sensory science, nutrition, and functional ingredients.
  4. Strong knowledge of FSSAI and international regulations.
  5. Experience setting up or leading an R&D lab/team.
  6. Creative thinker with the ability to balance science, consumer insight, and commercial viability.
  7. Strong leadership skills and ability to manage both internal and external stakeholders.
