Job Title: Senior Meat Production Manager

The Senior Meat Production Manager oversees the daily operation of the Butcher Shop and production facilities. This role involves directing, coaching, and supervising staff to ensure quality standards are met in meat handling and preparation.

Key Responsibilities:
  • Operational Efficiency: Ensure smooth day-to-day operations of the Butcher Shop and production facilities according to established company policies and procedures.
  • Staff Supervision: Direct and coach staff to maintain high-quality standards in meat handling, preparation, and presentation.
  • Meat Handling and Preparation: Responsible for thawing, butchering, and preparing all meat and poultry used in daily menus.
  • Cleaning and Maintenance: Oversee the cleaning of the Butcher Shop and thawing rooms, implementing effective methods to minimize equipment damage.
Financial Management:
  • Cost Control: Manage costs through efficient use of resources, supplies, and equipment.
  • Expense Reduction: Identify areas for expense reduction through cost control measures.
  • Reporting: Prepare various reports and letters using computer systems and equipment.
Motivational Leadership:
  • Workstation Management: Monitor and manage workstation functions and assigned duties.
  • Duty Assignment: Assign duties and responsibilities to staff while ensuring quality standards are maintained.
  • Quality Standards: Evaluate staff and work procedures to ensure adherence to quality standards.
Qualifications and Education:
  • Experience: Minimum two years' experience as a Head Butcher or Senior Meat Production Manager in an upscale hotel, resort, cruise ship, or convention banqueting service.
  • Culinary School Degree: Culinary school degree required.
  • Management Skills: Strong management skills in a multicultural and dynamic environment are essential for success in this role.
