About the Sous Chef Position

The primary responsibility of a successful Sous Chef is to maintain operational efficiency by constantly analyzing food production quality and cost.

Responsibilities:

  • Maintain effective time management and adhere to set standards.
  • Provide ongoing coaching and training, ensuring that corporate objectives are met.
  • Ensure safe, quality food products and deliver exceptional guest satisfaction.
  • Develop and implement systems, procedures, rules, and objectives set by the organization, taking a disciplined approach when undertaking tasks.
  • Work within a technical/specialized area of expertise to improve service and product quality.
  • Exhibit an accommodating and helpful attitude towards colleagues and guests.
  • Achieve set goals in a non-assertive and efficient manner.
  • Conduct daily food tastings and address any discrepancies immediately.
  • Collaborate with Section Heads to prepare electronic requisitions according to forecasted figures.
  • Monitor the dinner service line to ensure smooth and efficient presentation and plating.
  • Utilize the Culinary Checklist to track production and preparation levels.
  • Adhere to Public Health regulations (US, Anvisa, Shipsan, Canadian, Australian, etc.) at all times.

Qualifications:

  • Advanced culinary skills, leadership abilities, and extensive experience.
  • Minimum 8 years of experience in the profession (Quality Hotels and Restaurants).
  • Minimum 2 years of experience in a management role in a well-recognized luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English communication skills.
  • Ability to effectively communicate with senior management.
  • Strong leadership and decision-making abilities.
  • Excellent administrative skills.
  • Proven coaching experience for subordinates.
  • Cost and quality consciousness.
  • Flexibility in adapting to changing circumstances.
  • Experience working with international team members.
  • Ability to perform assigned duties under pressure.

  • Cruise Ship Experience/5 star Hotel
  • Fluency in additional language(s)
