Meat Department Supervisor

About the Role:
We are seeking a highly skilled and experienced Meat Department Supervisor to oversee the daily operations of our meat department. This is a key leadership role that requires exceptional organizational, communication, and problem-solving skills.

Key Responsibilities:
As a Meat Department Supervisor, you will be responsible for leading a team of butchers and ensuring that all meat products are prepared and presented to the highest standards. Your duties will include:
  • Evaluating and implementing efficient operations of the meat department, adhering to company policies and procedures.
  • Directing, coaching, supervising, and evaluating direct reports in conjunction with other senior staff members.
  • Maintaining thorough knowledge of food safety regulations and ensuring compliance on a daily basis.
  • Ensuring the cleaning and maintenance of the meat department and surrounding areas, exercising caution to minimize equipment damage.
  • Preparing the meat department for announced or unannounced inspections by regulatory authorities.
  • Storing received meats and poultry in freezers on delivery days.
  • Requisitioning and transporting necessary items from freezers to thawing rooms according to the Executive Chef's schedule.
  • Verifying product yields and portions adhere to established guidelines, effectively utilizing trimmings.
  • Completing daily recaps as required by the Executive Chef.
  • Assisting the Inventory Manager with taking inventory of meat and poultry storage rooms as needed.

Financial Responsibilities:
As a key member of our management team, you will also be responsible for containing costs through proper use, handling, and maintenance of records, reports, supplies, and equipment. This includes identifying potential expense reductions through cost control and analyzing operational problems to establish effective controls.

Motivational Responsibilities:
You will lead by example, monitoring and managing assigned workstation functions, assigning duties and responsibilities to staff, evaluating their performance regularly, and making recommendations regarding personnel actions. You will also provide on-the-job training and mentorship to strengthen staff performance and prepare them for future advancement opportunities.

Qualifications and Education:
To be successful in this role, you will need to have a minimum of two years' experience as a Head Butcher in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred). You must also have a culinary school degree and proven management skills in multicultural and dynamic environments. Excellent communication, problem-solving, decision-making, and interpersonal skills are essential, as is the ability to write reports and business correspondence.
