Executive Meat Operations Manager

A prestigious role is available for an experienced Head Butcher to oversee the operation and management of a busy butcher shop.
Key Responsibilities:- The successful candidate will be responsible for ensuring the smooth day-to-day operation of the butcher shop, adhering to company policies and procedures.
- They will direct, coach, support, supervise, and evaluate the performance of direct reports, working closely with the Sous Chef to achieve exceptional results.
- The ideal candidate will have a deep understanding of meat preparation, butchering, and thawing, as well as excellent knowledge of United States Public Health Rules and Regulations.
- They will be responsible for maintaining high standards of cleanliness and organization in the butcher shop and thawing rooms, ensuring that equipment is properly maintained and minimizes damage.
- The successful candidate will also be responsible for preparing the butcher shop and thawing rooms for any announced or unannounced USPH inspections, demonstrating their ability to work under pressure.
- Additionally, they will ensure that all meats and poultry are stored correctly in freezers on loading days, and requisition and transport necessary items from freezers to thawing rooms according to the Executive Chef's schedule.
- They will also monitor product yields and portions, ensuring that they conform to the Butcher Manual provided by the corporate office, and effectively utilize or dispose of trimmings.
- Furthermore, the successful candidate will complete daily butcher recaps as required by the Executive Chef, and assist the Inventory Manager with taking inventory of meat and poultry storage rooms as needed.
- They will also be responsible for ensuring that butcher shop personnel arrive on time, are dressed in proper uniforms, and adhere to personal hygiene standards outlined in company policy.
- Other key responsibilities include being present during early standby periods when the ship is subject to a USPH inspection, and acquiring knowledge to comply with the ship's standard operation to assist guests and crew members with inquiries.
- Lastly, the successful candidate will attend meetings, training activities, courses, and other work-related activities as required.
- This position is accountable for cost containment through the proper use, handling, and maintenance of records, reports, supplies, and equipment.
- They will identify potential expense reductions through cost control, analyze operational problems, and establish controls to minimize waste.
- The successful candidate will review timesheets and forward them to the Sous Chef for approval, and may prepare various reports and letters using personal computer systems and equipment.
- They will also ensure that items are requisitioned in correct quantities within acceptable timeframes, and conduct workstation spot checks to minimize deterioration and waste.
- The successful candidate will monitor and manage assigned workstation functions, assign duties and responsibilities to staff, and observe and evaluate staff and work procedures to ensure quality standards and service are met.
- They will make recommendations regarding personnel actions such as new hire requests and discharges to ensure adequate and continuous staffing.
- Furthermore, the successful candidate will inspect workstations, work areas, equipment, and other relevant areas to ensure efficient service and conformance to standards.
- They will mentor, develop, and provide on-the-job training to staff to strengthen their current performance and prepare them for future advancement.
- The ideal candidate will possess a minimum of two years' experience as a Head Butcher in an upscale hotel, resort, cruise ship, or convention banqueting service, preferably with shipboard experience.
- They will hold a culinary school degree, demonstrate strong management skills in multicultural and dynamic environments, and possess very strong communication, problem-solving, decision-making, and interpersonal skills.
- Additionally, the successful candidate will exhibit superior customer service, teamwork, and conflict resolution skills, and demonstrate knowledge of principles and processes for providing personalized services including needs assessment techniques, quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques.
- They will also possess strong planning, coaching, organizing, staffing, controlling, and evaluating skills, intermediate computer software skills, and a good understanding of basic accounting principles.
- Lastly, the successful candidate will have the ability to write reports and business correspondence, and establish a good rapport with the ship's Senior Officers and the corporate office.
