Meat and Poultry Operations ManagerAs a key member of the kitchen team, you will oversee the daily operations of the meat and poultry preparation department.Key Responsibilities:Ensure smooth and efficient operation of the production process, adhering to established protocols and standards.Lead, coach, and supervise staff members; evaluate their performance with senior management.Prepare, thaw, butcher, and portion meat and poultry for daily menus.Maintain knowledge of food safety regulations and ensure compliance on a daily basis.Conduct regular cleaning and maintenance tasks in the butchery and thawing rooms to prevent equipment damage.Prepare areas for announced or unannounced inspections by regulatory bodies.Manage inventory by storing received meats and poultry in freezers and transporting items as needed.Monitor product yields and portions to ensure they align with established guidelines.Complete daily reports and recaps as required by senior management.Ensure staff adhere to timetables, wear appropriate uniforms, and maintain personal hygiene and appearance.Attend meetings, training sessions, and workshops as necessary to enhance skills and knowledge.Financial Management:Effectively utilize resources, handle supplies and equipment, and maintain accurate records.Identify potential cost-saving opportunities through effective cost control measures.Analyze operational issues and implement corrective actions to optimize performance.Prepare various reports and correspondence using computer systems and equipment.Properly requisition items in correct quantities within acceptable timeframes and according to established procedures.Conduct workstation inspections to minimize deterioration and waste.Personnel Development:Monitor and manage workstation functions.Assign duties and responsibilities to staff members.Evaluate staff performance and work procedures to ensure quality standards and service excellence.Make recommendations regarding personnel actions such as new hires and terminations.Inspect workstations and work areas to ensure efficient service delivery and adherence to standards. Provide mentorship, training, and development opportunities to staff members.Qualifications:Culinary school degree.Strong management skills in multicultural and dynamic environments.Excellent communication, problem-solving, decision-making, and interpersonal skills.Superior customer service, teamwork, and conflict resolution skills.Good understanding of basic accounting principles including numbering flow, debits/credits, adjusting entries, and corrections.
