Job description and responsibilities
- Prepare a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes.
- Should be master in Gelato, Entremets cakes, structure cakes, macrons, Classic French Desserts, Chocolatier.
- Create new and exciting desserts to renew hotels menus and engage the interest of customers
- Able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants and doughnuts etc.
- Stocking checking and ordering ingredients
- Keeping accurate records
- Recruiting, hiring and training Assistants or Junior Chefs
- Manages all day-to-day operations of the pastry and bakery section of the kitchen.
- Able to develop, designs, or creates new ideas and items for Pastry Kitchen.
- Follows proper handling and right temperature of all food products.
- Decorate pastries and desserts using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting.
- Coordinates activities of cooks and workers engaged in food preparation.
- Checks the quality of raw and cooked food products to ensure that standards are met.
- Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget.
- Check quality of material and condition of equipment and devices used for cooking.
- Ensures compliance with all applicable laws and regulations.
- Operates and maintains all department equipment and reports malfunctions.
- Ensure compliance with food hygiene and Health and Safety standards.
- Guide and motivate pastry assistants and bakers to work more efficiently.
- Maintain a lean and orderly cooking station and adhere to health and safety standards.
Qualification:
- Should have at least 10 years of experience in specialty bakery like French patisseries, Gelato and savories
- Should hotel management degree from a reputed institute.
- Must have completed specialty training on deserts from leading institutes like lavonne academy, whitecaps institution or any equivalent academy.
- Proven skill in baking, pastry preparation and decoration.
- Must be hotel management graduate from a reputed institute.
- Should be master in Gelato, Entremets cakes, structure cakes, macrons, Classic French Desserts, Chocolatier.
- Must be expert in gourmet cookies, gourmet cookies, sour dough, artisanal breads, cheese cakes, petit Antoine, tiramisu,
- Should be able to work on Gelato recipes (appropriate training shall be provided on machinery usage).
- Extensive knowledge of health and safety procedures for kitchens and food preparation areas
- Excellent attention to detail
- Exceptional time management skills
- Ability to work autonomously, but also with a team
- A food hygiene certificate or any food handling or preparation qualification
- Ability to calculate costs and manage a budget
